The marzipan is a prepared paste finely hulled and ground almonds, mixed to the white of eggs and Sugar.

This preparation is traditional in several countries of Europe.

The recipe, and notably the proportions of sugar and of ground almonds, is very variable according to the production place.

The flexibility of this paste does that it is frequently used for the casting of small objects in decorative forms intend for the consumption individually or as left the elements of setting of other pâtiseries.

Nougat is a term used to describe a variety of similar confectioneries made with sugar or honey, roasted nuts (almonds, walnuts, pistachios or hazelnuts are common, but not peanuts) and sometimes chopped candied fruit.

The consistency of nougat can range from chewy to hard depending on its composition, and it is used in a variety of candy bars and chocolates.
